The elevation provides cool nights, lending a freshness to the fruit. The vines are 60 years old, planted on white granite and red schist soils. After hand harvesting, vinification begins with 18 days of cold carbonic and alcoholic fermentation starting on day 11. Aging sees 75% of the wine in old oak barrels for 10 months.
