We left this wine on the skins for 7 days and then pressed off into Flextank for 18 months! Starting with intense black and blue fruit and a wild intensity, over time the acidity remains present (it IS Frontenac Noir, after all!), but the fruit has settled down a little to allow some beautiful pepper and spice to come
